A quick and comforting seafood dish where tender Mediterranean Horse Mackerel is gently poached in a fragrant coconut, curry, and turmeric sauce.

Finely chop the onion and garlic. Fry them in a pan over medium heat until softened and fragrant.
Add the bell peppers and cook thoroughly until tender.
Stir in your seasoning and spices, mixing well to coat the vegetables.
Pour in the coconut milk and let it simmer for a couple of minutes.
Add the fish fillets, cover the pan with a lid, and cook for about 7 minutes, or until the fish is cooked through and flakes easily.
Serve with rice and finish with a drizzle of chili oil.
