Coconut Poached Horse Mackerel

This Coconut Poached Horse Mackerel is a quick and comforting seafood dish where the fish is gently poached in a fragrant sauce.
  • 2 tbsp of olive oil
  • 1 onion
  • 3 garlic cloves
  • A handful of bell peppers (I used red, yellow and green)
  • 1 cup of coconut milk/cream
  • 1 tsp curry
  • 1/2 tsp of turmeric
  • 200ml vegetable stock
  • Mediterranean Horse Mackerel filleted
  • Some rice to serve as a side
  • Homemade chili oil to drizzle
  • Seasoning: salt and pepper

Method

Finely chop the onion and garlic. Fry them in a pan over medium heat until softened and fragrant.

Add the bell peppers and cook thoroughly until tender.

Stir in your seasoning and spices, mixing well to coat the vegetables.

Pour in the coconut milk and let it simmer for a couple of minutes.

Add the fish fillets, cover the pan with a lid, and cook for about 7 minutes, or until the fish is cooked through and flakes easily.

Serve with rice and finish with a drizzle of chili oil.
